Egg Sambal: A Malaysian Comfort Food Fave!

If you grew up in Malaysia, this dish will most likely remind you of your childhood. It's popular with busy moms because it comes together effortlessly in a few easy steps and delivers big on flavor and dinnertime delight!

Egg Sambal

A dozen hard-boiled eggs - peeled and halved
2 tbsp neutral oil
One cup diced tomatoes - fresh or canned
2 heaping tbsp Hot Chilli Sambal
1 large red onion - sliced into rings
Salt, pepper and sugar to taste

1. Heat the oil in a pan over medium high heat. Add the tomatoes, sambal and onion.

2. Season with salt, pepper and a touch of sugar if your palate likes that kind of thing.

3. Mix well and sauté for two minutes.

4. At this point, taste it for heat level - add more diced tomatoes if you find it too spicy OR if you like it spicier, add more Hot Chilli Sambal, you perfect little demon!

5. Cook until the onions begin to wilt, then spoon the sambal mixture over the halved eggs.

Enjoy with white rice and a veggie of your choice.

My favorite sides to serve this with are:

• Sliced cucumbers, plain or dressed lightly with soy sauce and sesame oil (a great way to cool the heat of the sambal)

• Garlicky sautéed spinach

• Long beans aka snake beans or yardlong beans

• Pickled daikon and carrots (easy to have on hand for weeknight dinners)
